BU! announces mouth-watering menu additions

Located on the fourth floor of the iconic World Trade Centre Mall and best known for its flamboyant feasts, tantalising cocktails and high-energy atmosphere, BU! has unveiled its first menu change since its successful opening in April 2016. 

 

With Mexican head chef Humberto Canales taking the culinary centre stage, BU! has fast become a hotspot for showcasing the finest in traditional cuisine from Argentina, Mexico, Brazil and beyond, all served with a modern twist. 

 

Building on the existing menu, for the forthcoming season chef Humberto is set to further delight and inspire with an interesting yet delicious range of dishes and small food plates. Taking inspiration from Latin America’s tropical Caribbean Islands, such as Cuba, Puerto Rico and Curacao, chef Humberto combines the spicy and fresh fruity flavours of these regions with aromatic Japanese and Peruvian cuisines known as Nikkei. Marrying vibrant mango, coconut and kiwi fruits with Asia’s aji, miso and togarashi, Canales has created unforgettable tastes and the ultimate menu. 

 

Signature plates from the new menu include;

 

‘Langosta Nikkei’ 

Prepared using succulent and subtle-tasting Caribbean lobster, the Langosta Nikkei is served with aji amarillo, and parmesan cheese. Citrus flavours, combined with the sharp spicy essence of the yellow chilli, make the dish zesty and delectable. 

 

‘Pasta de Mariscos’ 

The Pasta de Mariscos is a dish with heavy Argentinian influences. The dish, an enticing blend of seafood, poblano chili, tagliatelle pasta, and black truffle will exceed expectations. Chef Humberto comments: “Pasta is surprisingly popular in Argentina. After World War Two the Italians who migrated to Argentina contributed heavily to Argentinian gastronomy,  combining seafood from South America with black truffle native to Northern Italy.” 

 

‘Vuelve a la vida’ 

The revival dish Vuelve a la vida, loosely translated to ‘give back to life’, is loaded with fresh, delicious seafood rich in Omega-3 oils. Prepared using shrimps, octopus, calamari, scallops and fresh fish, the Vuelve a la vida contains ripe tomatoes, avocado, coriander, and Serrano chili. Combined with clam juice and green chilies, every bite of this dish leaves you wanting more. 

 

For meat lovers the Ternera nikkei (veal belly) and the Lomo glaseado (tenderloin) are not to be missed. Cooked using the unique Sous-vide cooking technique, BU! serves up the most tender and juicy steaks in the city. Or, select the exotic spiced duck salad served with green papaya, maracuya (a South American passion fruit) and crisp mixed greens
